SugarLou’s Simple Vanilla Butter Cake Recipe: Every Baker’s Best Friend

 

Sugarlou’s Simple Vanilla Butter Cake can be easily made into a Victoria Sandwich Cake with cream cheese frosting and strawberry jam, yummy!

A bite of this Simple Vanilla Butter Cake will feel like a warm hug from a close friend. Once you have this delicious base recipe, you can use it to bake and build a variety of other cakes. I’ve decided to convert my basic vanilla butter cake into a delicious Victoria sandwich cake with cream cheese frosting and strawberry jam.

Ingredients
Makes one 2-layer, 6-inch round cake

 

SugarLou’s Simple Butter Cake

Put them all together and you will create a wonderful cake.
  • 125 grams of unsalted butter
  • 1 cups of sugar
  • A pinch of teaspoon salt
  • 2 eggs
  • 1 tsp good vanilla extract
  • 1/2 cup of milk
  • 1 1/2 cups self-raising flour

 

Victoria Sandwich Cake

  • ½ cup of good homemade strawberry jam. Make your own or check out Mangolicious’ beautiful Strawberry Chia Jam.
  • SugarLou’s Cream Cheese Frosting

 

Method

SugarLou’s Simple Butter Cake

  1. Preheat oven to 175° C.
  2. Prepare two 6-inch round cake pans (grease your pans with butter and dust with flour).
  3. Cream the butter and sugar until it becomes white and doubles in volume. This should take approximately 7 minutes.
  4. Add vanilla followed by eggs one at a time and beat after each addition making sure that the eggs are properly combined with the butter.
  5. Add salt and give it a quick mix.
  6. Add the flour and milk in an alternating fashion into the mixture, stirring between each addition. Be sure you start and end with the flour and DO NOT OVERBEAT. Mix until ingredients are just incorporated.
  7. Divide your batter as evenly as possible into your prepared pans.
  8. Bake for 30 to 40 minutes. (Tip: every oven is slightly different so to be sure your cake is ready, stick a toothpick or satay stick into the middle of your cake after 30 minutes. If it comes out clean it’s done).
  9. Cool on wire racks for 20 minutes before gently inverting onto racks.
  10. From here you can gobble up the cake while it’s still warm – so good -or, wait until it has cooled completely and turn it into a Victoria sandwich cake!

 

Victoria Sandwich Cake

Have your jam and cream cheese frosting ready!
  1. Spread the jam over the top of one of your cakes.
  2. Pipe the cream cheese frosting over the jam and place the other cake on top.
  3. Pipe rosettes with your cream cheese frosting over the top of your cake. If you don’t know how to do this, watch my instruction video below, or simply slather the cream cheese on top. It’ll taste just as good!
